We haven’t had a coffee table for years! I love them, love styling them, love the function they add, but having one doesn’t always work out. Our daughters are eight and a half years apart, so we’ve had littles rolling around the ground and jumping off sofas for a while – it just didn’t make sense for the way we used our family room. Then there was the challenge of finding one I loved and was willing to pay for. For years I’ve been searching for vintage pieces to create my own coffee table, checking Facebook Marketplace for a unique piece to restore, but no luck. When I finally found one that I really liked and felt would coordinate with my coordinated living room pieces, it was way out of my budget. So, I decided to build a Pottery Barn coffee table copycat, but not from scratch. Instead, I built a simple cover that slides onto an existing tabletop that I didn’t love so much!

Building the Pottery Barn coffee table copycat was so much fun! I wasn’t too concerned if it didn’t work out because I used the most inexpensive spacer wood I could (aka lattice boards). I knew going in that the boards weren’t exactly the same size, they were rough, and uneven, but I liked those qualities about them because that meant I could easily create a unique piece that looked a little old and rustic with a modern frame. I added the decorative corners at the last minute because I think they add a little more stability to the thin wooden corners, and they add a nice finishing touch too. The best part about this Pottery Barn coffee table copycat is that it lends itself to any design you can think of, and it’s simple enough for anyone to take on.

This DIY project started with this inexpensive coffee table from Walmart. I was really only after the black metal frame and the size. It was actually less expensive for me to buy an entire coffee table over just a black frame to add my own top to. Go figure! It turned out to be better this way though, if my coffee table cover didn’t turn out, I still had a useable table, and the existing top added strength to my cover. Below I’ve included some additional coffee tables that I considered.

You may look at the affordable Walmart coffee table and think the chevron pattern looks pretty nice and the color is OK, but I was after a thicker looking top without adding a lot of weight. I also wanted to apply my custom stain color to the wood and bring in the herringbone pattern. This Pottery Barn coffee table copycat isn’t an exact match, but it’s definitely inspired and more affordable than the original. The cool part is that both of my daughters have expressed how much they like the new table – which is pretty great to me. Here’s a photo of the original coffee table in our living room before I created a simple cover for it.

I love the mix of modern black metal with the rustic worn top – it feels cozy, a little vintage, but sturdy and fresh in a way. The Malcolm coffee table is longer than mine, uses solid wood, has the designer look and details I love, but when something is outside my budget I always consider if I can make it myself. And this time I decided I would attempt something similar for a fraction of the price. Below you can see the Pottery Barn coffee table that inspired this project.

Pottery Barn Coffee Table Copycat – Tutorial

The cover that I built started with a piece of scrap plywood I had on hand. I used 1/2-inch plywood so that it was thick enough to nail into, but not too heavy. To get the plywood to fit the top of the coffee table, I just flipped the coffee table upside down and traced around it onto the plywood. Just cut your traced lines. Then I cut a bunch of 12-inch-long lattice pieces. I used about 14 spacer (lattice) boards for the top, and then I was able to use the trimmed off pieces to fill in the rest of the spaces. The video I made showing the process is the best way to demonstrate how the top pattern came together. I was able to use 2″ wide boards to create the border – and these boards were the same thickness as the lattice boards along the top so it doesn’t bulge over the edges at all. You can use any boards you want to wrap and frame the new cover, but I wanted to make sure the cover didn’t overlap with too much thickness away from the frame. My goal wasn’t to create something that looked made, but to create something that looked like it always was. I also found these decorative corner pieces to add a nice detail and some added security for the corners of the coffee table cover.

Once the boards were glued and nailed down (3/8″ brad nails), there were some small spaces in between some boards. The lattice boards aren’t perfectly uniform, so I used wood filler to fill some of the wider spaces. The wood filler claims it can be stained, but there are some places that didn’t stain well. Again, I wasn’t looking for perfection and this outcome didn’t ruin the overall look but be aware of my experience before you begin a similar project. I sanded the entire cover with 180 grit and then 220 grit sandpaper. Once cleaned off, I added Rove Dwell’s Farmhouse stain. Four hours later, gently sand with a 220-grit sanding sponge, and clean off. Then, I lightly applied Varathane’s whitewash stain and immediately wiped it off. These are the two main steps to achieve my white oak looking stain color. I love the warm and worn look of it, and it’s not too dark for my taste. A matte polyurethane finish was brushed on to protect the surface.

Now that I have a coffee table in front of my sofa, I’ve been enjoying the opportunity to style it. Little changes to tabletops are a great way to reuse your decor and refresh a room. Recipe Ingredients

What you need for the graham cracker crust

First time baking? No worries because this key lime pie recipe is so easy to follow and doesn’t require any complicated techniques. As long as you have your mixing bowl and spoon, you’re good! 😉

  • Graham Cracker Crust – You only need crushed graham crackers, melted butter, sugar, and vanilla extract to make the graham crust. The sugar holds it together when it bakes. You can replace the graham crackers with any cracker-like cookie (ginger snaps are my fave). And if you need a gluten-free pie, there is an excellent selection of gluten-free crackers that make a fantastic crust.
  • Key Lime – It has a more robust and bolder flavor and a unique and more distinct aroma than regular lime. Don’t forget to add the key lime zest because it gives our pie its iconic key lime flavor.
  • Egg Yolks – Aside from being a binder, egg yolks also add richness and a velvety texture to our pie filling.
  • Heavy Cream and Sour Cream – I love the added kick of tanginess from sour cream. It provides another layer of flavor to the filling apart from just being plain creamy. You may use plain yogurt or Greek yogurt as a substitute.
  • Condensed Milk – It thickens our luscious pie filling while adding creaminess and sweetness, too. Homemade condensed milk from scratch is super easy and more economical.
  • Topping – Let’s keep it simple with a lovely whipped cream, powdered sugar, and vanilla extract. Aside from making our pie more enticing, it also balances its tartness.

How to Make Key Lime Pie

Make the Crust

  • Grease the Pan – Grease a 9″x1.5-inch pie pan with baking spray or butter. Set aside.
  • Crush the Crackers – In a food processor, add graham crackers and pulse several times until crumbs are fine. Or crush them manually, as shown in the photos. (Photos 1-2)
  • Add Sugar, Cinnamon, and Melted Butter – Continue grinding until everything is thoroughly mixed. If using ground graham crackers, place all the ingredients in a large bowl and mix thoroughly – proceed with the following steps. (Photos 3-4)
  • Prepare the Crust – Press the graham cracker mixture into the prepared pie pan with the bottom of a measuring cup. Keep pressing until the crumbs are firmly positioned on the bottom and up the sides of the pan.
  • Bake It – Bake until set, about 8-10 minutes, or until slightly brown. Then remove it from the oven and place it on a rack to cool.

Make the Pie Filling

  • Slice and Squeeze – Carefully grate the skin to get the key lime zest. Then cut the key limes in half and squeeze out the juice. (Photos 7-9)
  • Combine sweetened condensed milk, sour cream, egg yolks, key lime juice, and zest in a large bowl. Whip or beat the mixture to increase the volume and thicken it slightly. (Photos 10-12)

Bake and Chill

  • Pour the thickened mixture into the warm graham cracker crust. (Photo 13)
  • Bake, Cool, and Chill – Bake for 15-18 minutes until the filling is almost set; it should wobble slightly. Let it cool at room temperature for 30-45 minutes, then place it in the refrigerator to chill thoroughly, about 3 hours. (Photo 14)
Decorating with whipped cream

Make the Topping and Decorate

  • Whip – Pour the whipped cream into a large bowl and mix with an electric mixer until soft peaks form. Then add powdered sugar and vanilla extract, and continue mixing until medium peaks form. (Photos 15-17)
  • Decorate – Pipe whipped cream mixture decoratively on top of the pie. Alternatively, you can place the mixture on the pie without piping. Decorate the pie with the lime zest and lime slices. (Photos 18-20)
  • Refrigerate – Store the pie in the refrigerator until ready to serve.
  • Serve – When ready to slice, place the knife in hot water and slice into wedges, wiping your knife clean in between slices. (Wiping the knife produces a clean cut.) Serve cold.

Recipe Variations

  • Meringue Topping – What to do with the egg whites? Make meringue! The airy texture is similar to marshmallow fluff, only lighter. I like toasting the top for the caramel flavor. Yum!
  • Dairy-Free – Replace both cream and sour cream with equal amounts of coconut cream and a teaspoon of fresh lime juice. Then replace the evaporated milk with a dairy-free substitute for a dairy-free filling. Tofu with a teaspoon of lime juice also works if you don’t like coconut.
  • Eggless – Go eggless with a no-bake key lime pie, just like my No Bake Key Lime Mango Coconut Cheese Cake Pie. Simply use the same graham cracker crust and the no-bake filling. As easy as 1, 2, 3! Oh yes! 😉
  • Fruity Surprise – Shake things up a bit by adding a fruity surprise to the pie filling. You can add a half cup of pureed or sliced strawberries, blueberries, pineapple, or mango to our luscious filling.
  • Chocolately Twist – Instead of the usual graham cracker crust, you can replace it with crushed Oreos for amazing chocolate goodness.

Tips and Tricks

  • You can replace key lime with regular lime if you can’t find them. However, the taste will be slightly different, which is not a bad thing.😉
  • Do not overmix the pie filling mixture to prevent incorporating too much air. Overmixing causes the filling to inflate while baking and then deflate after baking, cracking the pie’s surface.
  • The filling should be a little jiggly in the middle. But don’t worry because it will set as it cools down and after chilling.
  • Zesting the lime before juicing makes the job easier.

I highly recommend making this easy key lime pie recipe a day ahead to give it enough time to set before serving. The flavors meld beautifully, and the texture is so irresistibly good, giving this summertime dessert its soft melt-in-your-mouth goodness.

However, I suggest adding the whipped cream topping and decorations on the day of serving. That way, it’s easier to wrap the pie with a cling wrap and store it in the fridge to keep it fresh before serving.

Serving and Storage Instructions

This pie is best served cold. That is why it’s also the perfect treat this summer to help you cool down on a hot summer day. Along with refreshing, wholesome beverages such as mango or pineapple juice. Or fruity summer cocktails, like a hurricane and mimosa, to kick off the party.

As for the leftovers, you can cover the dish with a cling wrap or foil or transfer them into an airtight container before storing them. They will keep in the fridge for three days and for two months in the freezer.

Tip: Make sure to remove as much air as possible if you intend to store the pie in the freezer to prevent ice build-up and minimize curdling after thawing.

Key lime has higher acidity than regular limes, so it may taste a tad bitter. If you ended up with bitter key limes, try replacing a tablespoon of the key lime juice with a tablespoon of lemon juice to balance it out.

Why is my key lime pie runny?

There could be two reasons. First, it has to bake long enough for the egg to set. It should be wobbly like jello when you take it out of the oven but not sloshy. Second, it may need to chill a little longer. It should firm up in about three hours of fridge time. If that doesn’t work, the egg yolks may be too small. Try adding an extra one the next time.

How do you know when the key lime is set?

Key lime pie needs to bake for 15-20 minutes to set correctly. The filling should be wobbly (not completely solid) because it will continue to bake from residual heat. It should be slightly firm to the touch and not runny. It should get firm after chilling in the fridge.

  • Preheat the oven to 375℉/190℃ and set an oven rack in the middle position.
  • Grease a 9×1.5-inch pie pan with baking spray or butter. Set aside.
  • In a food processor, add graham crackers, and pulse several times until crumbs are fine. Or crush them manually, as shown in the photos.
  • Add sugar, cinnamon, and melted butter, and continue grinding until thoroughly mixed. (If using ground graham crackers, place all the ingredients in a large bowl and mix until thoroughly combined – proceed with the following steps.)
  • Press the graham cracker mixture into the prepared pie pan with the bottom of a measuring cup. Keep pressing until the crumbs are firmly positioned on the bottom and up the sides of the pan.
  • Bake until set, about 8-10 minutes, or until slightly brown. Remove and place on a rack to cool.
  • Carefully grate the skin to get the key lime zest. Then cut the key limes in half and squeeze out the juice.
  • Combine sweetened condensed milk, sour cream, egg yolks, key lime juice, and zest in a large bowl. Whip or beat the mixture to increase the volume and thicken it slightly.
  • Pour the thickened mixture into the warm graham cracker crust.
  • Bake for 15-18 minutes until the filling is almost set; it should wobble slightly. Let it cool at room temperature for 30-45 minutes, then place it in the refrigerator to chill thoroughly, about 3 hours.
  • Pour the whipped cream into a large bowl and mix with an electric mixer until soft peaks form. Then add the powdered sugar and vanilla extract, and continue mixing until medium peaks form.
  • Pipe whipped cream mixture decoratively on top of the pie. Alternatively, you can place the mixture on the pie without piping. Decorate the pie with the lime zest and lime slices.
  • Store the pie in the refrigerator until ready to serve.
  • When ready to slice, place the knife in hot water and slice into wedges, wiping your knife clean in between slices. Wiping the knife produces a clean cut. Serve cold.
  • You can replace key lime with regular lime if you don’t have them in your area. However, you’ll need to adjust the amount of juice since they have different acidity, and note that the taste will be slightly different.
  • Do not overmix the pie filling mixture to prevent incorporating too much air. Overmixing causes the filling to inflate during baking and deflate after baking, causing a crack on the pie surface.
  • The filling should be a little jiggly in the middle. But don’t worry because it will set as it cools down and after chilling.

You are going to love this recipe for lime cake! It features three fluffy layers of homemade lime cake. It’s topped with luscious lime curd and cream cheese lime frosting.

This is going to become your instant favorite recipe for lime cake! Fresh tangy limes are the star of this delicious cake! The moist layers are hinted with lime zest, filled with lime curd and frosted with honey lime cream cheese.

The idea for this lime cake with cream cheese frosting was inspired by my Lime Slice. I loved the idea of making lime the star of a dessert!

  • All-purpose flour-When you measure the flour, spoon your flour into your measuring cup then level it off with the back of a knife.
  • Unsalted butter-Take the butter out 2 hours before making the cake.
  • Oil– Use canola or vegetable.
  • Vanilla extract
  • Limes- Use key limes or regular limes. We are using both the zest and juice in this recipe. The oils in the zest add lots of tart citrus flavor.
  • Milk- Use whole, room temperature milk.
  • Sour cream- Use full fat, room temperature sour cream.
  • Eggs and yolks- Use large eggs, room temperature eggs.
  • Cream cheese– Use full fat, room temperature cream cheese.

Instructions

Here are the instructions on how to make a lime cake. Please see recipe card below for full instructions including measurements.

Step One-Beat the butter and sugar. Beat room temperature butter and granulated sugar in a large mixing bowl.

Step Two- Mix in the oil. Add the oil. Beat for an additional minute.

Step Three- Add the eggs. With the mixer on medium, add the eggs one at a time. Beat til eggs are incorporated fully.

Step Four-Add the vanilla extract and sour cream. Beat until just combined.

Step Five- Combine dry ingredients. Whisk to combine the flour, baking powder and salt in a medium sized bowl.

Step Six- Add the dry ingredients and milk. Mix in half the dry ingredients. Beat on low speed. Add the milk followed by the rest of the dry ingredients.

Step Seven- Bake the cake. Pour the batter into three 8-inch cake pans. Bake for 18-20 minutes. Allow cakes to cool completely.

Step Eight- Make the lime curd. Whisk the sugar and egg yolks in a saucepan. Stir in the lime zest, lime juice and salt.

Place pan on low heat and stirring constantly until  mixture thickens. Remove pot from heat, then add the butter. Stir until the butter has melted.

Step Nine-Make the cream cheese frosting. Beat the butter and the cream cheese with a mixer until combined. With the mixer to low and add the powdered sugar, lime zest, vanilla extract and salt. Beat 2-3 minutes or until light and fluffy.

ASSEMBLING THE CAKE

  • First, use a serrated knife trim the domes of the cake layers. Cover the layers with plastic wrap and freeze them for 30 minutes before decorating.
  • Place the first layer on your cake stand or turntable, spread ¾ cup of frosting. Pipe a border of frosting around the edge of the cake. This will keep the curd filling secure. Pipe another circle of frosting in the middle of the cake. Fill the middle of the two circles of frosting with lime curd.

  • Next, spread about 3/4 cup of frosting on top of the lime curd layer.
  • Repeat with the second layer.
  • Place the third layer upside down so that the bottom of the layer is on top of the cake. This gives will make sure the top is even and flat.

  • Spread a light layer of frosting over the top and sides of the cake. Freeze the cake for 15 minutes. Freezing the cake will ensure crumbs don’t get into your second coat of frosting.
  • Frost the rest of the cake. If making a naked cake, use a cake scraper to scrape off any excess frosting.

DECORATING THE CAKE

Pour some of the lime curd into a squeeze bottle or use a teaspoon to drizzle lime curd along the edge of the cake. Add a little extra lime juice to the curd if you need to thin it out.

Decorate the top of the cake with more frosting and lime slices. I used a Wilton 1M piping tip to pipe the frosting on top.

  • Limes – instead of limes, you can use lemons
  • Lime curd – leave out the lime curd and simply decorate the cake with the cream cheese frosting

VARIATIONS

This cake can be made using regular limes or key limes. To make a key lime cake from scratch, use key limes in place of regular limes.

Instead of drizzling lime curd along the cake’s edge, pour and spread it in an even layer on the top of the the frosted cake. Pipe frosting on top, if you like.

Store leftover cake in an airtight container in the refrigerator for up to 5 days.

The frosted cake can be frozen up to 1 month. Thaw overnight in the refrigerator and bring to room temperature before serving.

Unfrosted cake layers can be frozen for up to 2 months. Thaw before decorating.

EXPERT TIPS

Avoid the white part of the rind when zesting the limes. You want only the outer green zest. The white rind can be bitter.

If you’re going to pipe frosting on top of the cake, chill frosting in the fridge. 20 minutes should be enough to help ensure the frosting will hold its shape once piped.

  • 1 tablespoon baking powder
  • 1 teaspoon salt

  • In a medium saucepan, combine the sugar, zest, juice and salt. Whisk til combined. Place pan over medium-low heat. Whisk in the eggs and yolks mixture.
  • Stir constantly with a wire whisk (or use a rubber spatula) until mixture thickens (it should be thick enough to coat the back of a wooden spoon), about 5-7 minutes.

The pie crust can really make or break an entire pie.  Even when filled with a delicious filling, the overall pie won’t live up to its potential unless the pie crust is equally tasty and flaky.  We all know this is true and have been really excited to eat a piece of pie, whether one we made ourselves or one that we purchased from a restaurant, only to be let down by a crust that was underdone, too plain, or just off in taste.

There is quite the debate about whether butter or shortening is the best choice when making a pie crust.  The right choice really comes down to the taste that you prefer, but there are also some pros and cons of using either butter or shortening when making a pie crust.

Butter

If you’re looking for the tastiest flavor for your pie crust, you can’t go wrong with butter.  Using butter also helps to create a layered and flaky pie crust.  The reason that butter creates a flakier pie crust than shortening is because butter is only about 85% fat, while shortening is 100% fat.  The other 15% or so of butter is water.  When you bake the crust in the oven, the water becomes steam as it evaporates.  This causes the layers of the crust to separate slightly, making them flakier and puffier than when you use shortening.

However, there are some downsides to using butter to consider too.  Butter melts at a lower temperature than shortening, which can make it more tricky to work with when making a pie.  You want the butter (or shortening) to remain cold to work it in with the flour for the crust, and if it softens too much it can tear too easily.  When butter is fresh out of the fridge, it can also be too cold.  So finding that sweet spot of just the right firmness can be a challenge.

Shortening

This leads us right into the benefits of choosing shortening.  Because of its higher melting point, shortening is easier to work with when making a pie crust.  You don’t have to worry too much about “Goldilocks” and making sure that it is just the right consistency.  

Shortening is also shelf-stable and doesn’t require refrigeration, which can make it easier to store than butter.  Another positive of choosing shortening is that the pie dough should maintain its shape during and after baking better.  For this reason, shortening is often the fat of choice for those making a decorative pie crust.

Shortening, however, is not without flaws either.  The biggest flaw of using shortening instead of butter is the flavor.  Shortening is not as flavorful as butter and is less likely to yield a truly delicious pie.  It can also sometimes make the pie crust taste a bit greasy.

So, is butter or shortening best?

While you can use either butter or shortening to make a pie crust, I think butter is the superior choice in nearly all cases.  You can’t beat the buttery and flaky flavor of a pie crust made with butter.  I always seem to be disappointed in the taste when I decide to give shortening a try.

For this reason, my 3 ingredient pie crust recipe below uses butter, not shortening.  I think you’ll really enjoy this recipe.  

Making a 3 ingredient pie crust is relatively simple.  You’ll just need three ingredients (well, three real ingredients plus ice water) and a few baking tools.

Ingredients

The ingredients you need are:

  • Butter
  • Flour
  • Salt
  • Ice-cold water. 

We already went over why butter is the optimal choice when making a pie crust, but you may be wondering why you need to use ice-cold water.  Using ice water helps to prevent the butter from softening too quickly.  It will help make the butter easier to work with while also yielding a flakier crust.

Tools and Equipment

In addition to the ingredients listed above, there are a few key tools that you’ll need to make my pie crust recipe.

  • Mixing Box
  • Teaspoon measuring spoon
  • Tablespoon measuring spoon
  • Measuring cup
  • Whisk
  • Knife
  • Silicone baking mat or wax paper
  • Pastry blender
  • Rolling pin
  • 9-inch pie pan

Ok, let’s dive right into how to make this pie crust that is certain to be a crowd-pleaser.  I’m going to walk you through each step to help you make sure that your recipe turns out perfectly.

Step 1

Add the salt and flour with a mixing bowl.  Whisk them together.

Step 2

Use a knife to cut the butter into small pieces (aim to get at least 10 slices from the stick of butter).  Add the butter slices to the flour and salt mixture, and use a pastry blender to combine the two.  If you don’t have a pastry blender, you could also use two forks for this step, though a pastry blender will be much easier to use.

Step 3

Continue cutting the butter into the flour mixture until it becomes crumbly and spread throughout.  However, you don’t want to blend it so much that it is completely smooth.

Step 4

Measure out about ½ cup of cold water.  Add a few ice cubes to the measuring cup to keep the water cool.  Use a tablespoon to measure out 1 tablespoon of water (none of the ice) at a time.  Add the tablespoon of water to the flour and butter mixture, and blend it some more with the pastry cutter after each addition. 

Step 5

Continue adding 1 tablespoon of water and blending after each addition until the mixture forms a dry dough.

Spread a little flour out on your counter or baking mat.  Use your hands to form a ball with the dough and place it on the floured countertop.  Wrap the dough ball up with plastic wrap.

Step 7

Let the dough cool in the refrigerator for a minimum of 2 hours.

Step 8

Once you’re ready to remove the dough from the fridge, prepare your countertop.  Layout a silicone baking mat or wax paper on your countertop.  If you’re using wax paper, use a little tape to secure the corners and prevent it from sliding around.  

Take the dough out of the fridge and put it on the baking mat or waxed paper.

Step 9

Use your rolling pan to roll the dough out into a 10-inch circle.  Place the dough into your 9-inch pie pan.

Step 10

Even out the edges of the crust by trimming off any excess dough.  Then, use your fingers to crimp the edges.  Prick the crust using a fork.

Step 11

If you need a pre-cooked pie crust for your recipe, place the crust in a preheated oven set to 425 °F.  Set a timer for 10 minutes.  After 10 minutes, check on the pie.  You want the crust to be golden brown before removing it from the oven.  If it isn’t golden brown, allow it to cook for a few more minutes (it could take up to 15 minutes total).

Otherwise, add your filling to the crust and bake it according to the recipe directions.

  • Don’t expect perfection if this is your first attempt making your own pie crust.  It takes some time to master the art of using a pastry cutter and rolling out dough.
  • A pastry cutter is worth the small investment.  The thick handle and slightly curved design makes it much easier and quicker to use to cut butter into flour than trying to use two forks.  
  • Make sure that your butter is cold when you are ready to cut it into the flour.  If the flour is too warm, it won’t mix properly.
  • Cut the butter into thin slices.  If your butter is too thick, it won’t mix in well with the flour mixture.
  • Don’t add too much water.  Pie crust dough is a drier dough; it should not be overly moist or sticky.  You’ll know that you’ve added enough water once the mixture forms a dough.  Don’t add any more after this point.
  • You can easily double the recipe below to make two pie crusts (to make two pies or a pie with a top crust).  Mix all the ingredients together, then when you’re ready to roll out the dough, split it in half.
  • Always refrigerate the dough for at least two hours.  This step is very important, otherwise your crust won’t turn out right.

You can make the dough ahead of time and store it in the fridge for 1 or 2 days.  If you plan to do this, after you roll the dough out and put it on the pie pan, keep everything in a large zippered plastic bag to prevent it from drying out.

Pie crust dough can also be frozen.  If you plan to freeze your pie crust dough, it is probably best stored in disposable aluminum pie tins.  After rolling out the dough and putting it in a pie tin, place the tin in a freezer-safe bag.  Pie crust can keep in the freezer for up to 2 months.

Prep Time:  20 minutes (plus 2 hour cooling time in refrigerator)

Cook Time:  10 to 15 minutes

Ingredients

  • 1 stick salted butter (½ cup)
  • ¼ teaspoon salt
  • 1 ½ cups all-purpose flour
  • ⅓ to ½ cup ice-cold water

Directions

  1. Whisk the salt and flour together in a mixing bowl.
  2. Cut the butter into thin slices and cut them into the flour mixture using a pastry blender until the mixture begins to look crumbly and the butter is spread throughout.
  3. Add ice cubes to ½ cup of water.  Add 1 tablespoon of water at a time to the butter and flour mixture, cutting it in with the pastry blender after each addition.  Continue adding water until the mixture turns into a dry dough.  You likely will not need the entire ½ cup of water, as pie dough should be dry, not overly moist.
  4. Form the dough into a ball and place it on a floured countertop.  Wrap the dough with plastic wrap and refrigerate it for at least 2 hours.
  5. After 2 hours, preheat the oven to 425 °F.   Then, prepare your baking surface by laying out a baking mat or wax paper on the countertop.
  6. Place the dough on the baking mat or wax paper and roll it into a 10-inch circle with your rolling pin.
  7. Carefully center the dough in a 9-inch pie pan and trim off excess dough along the edges of the crust.  Crimp the edges of the crust with your finger.  Use a fork to prick the crust.
  8. Bake the crust until golden brown, about 10 to 15 minutes, or fill with your favorite filling and bake according to the recipe instructions.

Country style ribs need to have two things to be really good: they need to have a lightly crispy, almost caramelized crust on the exterior and an interior that falls apart the moment you bite into it.

While the former can be achieved with some good lacquering, getting your ribs to the perfect texture and doneness without overcooking them is a real challenge.

• Remove the baking tray carefully from the oven, being careful not to spill the liquid at the bottom

• Check the ribs by poking them with a fork; if they are still tough, cover them again and bake for another 20 minutes

• Remove the ribs to a plate and then drain the liquid

• Place the ribs back onto the tray and brush with all of the BBQ sauce

• Turn the oven down to 275 Fahrenheit and bake for another 60 minutes uncovered, until the ribs are totally tender and pull apart

• Remove the ribs from the oven and baste the ribs again with the BBQ sauce

• Broil for about 5 minutes to crisp it up, rest them for 5 minutes, and then serve

Why Do You Need To Reapply The BBQ Sauce After The First Time?

The secret to that first great quality of really good country-style ribs is that thin, almost crispy crust around the exterior of every single rib.

If you don’t do those few extra additional steps listed in the recipe and just simply slather on your glaze, you won’t get that perfect textural contrast in the form of a thin, sweet, almost crunchy exterior that plays off the soft tenderness of the rib meat itself.

The trick is to be constantly lacquering your glaze over the ribs as it cooks.

While the initial basting of your BBQ sauce glaze is to get the flavor onto the ribs itself, each subsequent coating of BBQ sauce does something a bit different.

As you baste cold BBQ sauce onto the hot ribs and put them back into the oven, the liquid starts to evaporate, and the sugars begin to caramelize. Each new layer of glaze sort of re-injects moisture and flavor into the caramelizing sugar, sort of like adding a bit of water to some caramelized onions that are getting a bit too overcooked too quickly.

This lets the sugars get really, really caramelized and all of the flavors of the sauce to properly intensify, giving it tons of extra flavor on top of the rich, spicy meatiness of the ribs.

How To Avoid Over Cooking Your Ribs & Getting The Perfect Texture

The other key secret of making really great ribs is making sure the meat is really, really tender. This doesn't just mean cooking it for several hours and forgetting about it; it means being really careful and thoughtful while cooking the ribs to ensure that they end up perfect.

Following the temperature guidelines in this recipe should produce some tender, fall-apart ribs, but the final product is always going to depend on the size, thickness, and fattiness of your particular rack of ribs.

The only way to end up with a truly great rack of ribs is to be constantly checking it. The ribs should be done when the meat basically wants to fall off the bone all on its own, and the fork is just the gentle prod that the ribs need to properly all apart.

There is an upper limit, however. If you take it too long, the ribs will be in danger of drying out. So, when you think the ribs are getting close, check them every 10 minutes and pull them as soon as they start to fall apart.

If you leave them much longer, they will start to dry out and lose way too much deliciousness.

However, once you add the flour you can over mix the dough and make the cookies tough. Once all the flour is well incorporated, turn off the mixer.
  • COLD DOUGH. In order to produce cut out cookies with the perfect shape and texture EVERY TIME, the dough MUST be cold. Wrap your dough into several small disks, so you can take one piece out of the fridge at a time for rolling.
  • FLOUR WELL. Don’t be shy when flouring your work surface. More flour means you will have an easier time moving the cookies to the baking sheets. Keep a small flat spatula nearby in case of counter-stickage.
  • CUT CLOSE. The most tender cookies are the cookies that are cut out on the first roll. Try to leave as little space between your cutting as possible.

Sugar Cookie Icing Tips and Tricks

  • WHISK. Mix the icing with a whisk to remove all clumps.
  • TAP. Although the whisking is necessary, it creates a lot of bubbles. Once the icing is well combined, tap the bowl on the counter a few times to bring most of the bubbles to the surface.
  • COLOR. If desired, split the icing into several smaller bowls and add food coloring for decorating.
  • DIP. Yes, you can spread or pipe this icing, but the easiest method is simply dipping the face of the cookie into the icing, then tilt the cookie to the side and let the excess icing drip off back into the bowl.
  • TOOTHPICKS! Toothpicks are a highly underrated tool when it comes to cookie icing. Use a toothpick to pop any unwanted bubbles in the glaze, before the icing dries. Also use a toothpick to wipe off excess icing around the edges, before laying the cookies on a baking rack.
  • DRY. Our best sugar cookie icing is pretty delicate the first couple hours, and will crackle when touched, but it does set up over time. For best results, allow the cookies to dry on racks for 3-4 hours after decorating.

But What If I’m A Decorating Expert?

This cookie glaze is a fabulous tasting icing, but it does crackle a little under pressure, a bit more than traditional cookie icing. If you want a thicker sturdier icing for meticulous piping use classic Royal Icing.

Royal Icing Recipe

  • 4 cups powdered sugar
  • 3 tablespoons meringue powder
  • 10 tablespoons water

Combine in an electric mixer and beat for approximately 2 minutes. It should be thick and smooth.

After decoration, allow the cookies to dry 2-3 hours before moving.

Sugar Cookie Variations

We are crazy over the barely-there pumpkin spice sugar cookies flavor. But if you want to switch things up…

  • Skip the spice blend for classic vanilla-flavored cut out cookies.
  • Swap the spice blend for cocoa powder for a barely-there chocolate note in the dry ingredients.
  • Swap the vanilla extract for almond extract or lemon extract.
  • Jimmie sprinkles can be added to the cookie dough for confetti cookies.
  • Cookie Pops! Gently press a lollipop stick into the side of each cookie before baking. Then ice and decorate.

  • 2/3 cup half & half
  • 1 teaspoon extract flavor of choice
  • 4 cups powdered sugar
  • Using an electric mixer, beat the butter and sugar together until light and fluffy—5 minutes. Add the salt, pumpkin pie spice, eggs and vanilla extract. Beat to combine.
  • Slowly add the flour until the dough in smooth. Then separate the dough and wrap it in 4 separate pieces. Place in the fridge and chill for at least one hour. (Could be made weeks in advance.)
  • When ready to bake, preheat the oven to 375 degrees F. Line several cookie sheets with parchment paper.
  • Remove one disk at a time. Flour a work surface and roll the disk out to 1/8- to 1/4-inch thick. Work fast and cut the cookies as close together as possible. The more times you roll out the dough the tougher it gets. Use a thin spatula to transfer the cookies onto the baking sheets. Repeat with remaining dough. Bake for 6-9 minutes. Cool completely on the cookie sheets before moving.
  • Whisk the half & half, extract and powdered sugar together until smooth. Add food coloring if desired. Dip and face of each cookie into the icing. Use a toothpick to wipe the excess icing off the edges of the cookie and to pop the air bubble in the surface of the icing. Then set on a rack to dry.

For the Chicken and Marinade:
  • 1 ½ to 2 pounds boneless, skinless chicken thighs and/or breasts or tenderloins, cut into bite-sized pieces
  • Salt and pepper
  • ½ cup plain Greek yogurt
  • 2 tablespoons EACH pasted garlic and ginger or minced/grated
  • 2 teaspoons garam masala

For the chicken and marinade, season chicken and place in plastic food storage bag. Add the marinade ingredients and refrigerate overnight or a minimum of 30 minutes if making the same day.

For the preparation, brown chicken in large nonstick skillet over medium-high heat in melted ghee or oil and butter. Brown in stages to prevent crowding pan, 3 minutes on each side. Remove to sizzle platter or baking sheet. Add more fat, if necessary, and onion, season with salt and soften a few minutes, then add garlic and ginger and spices. Stir 1 to 2 minutes, add the tomatoes and simmer 5 minutes more. Puree in high-powered blender or food processor, add back to pan, add milk or cream, sugar or honey, fenugreek, chicken, juice of 1 lime and curry leaves (if using) and simmer at low heat for 8 to 10 minutes more.  

Serve chicken on rice and top with garnishes of choice.

When I say this is the best cut out sugar cookie recipe, I don’t mean to exaggerate. It’s just that it’s truly how I feel about these cookies, which in my opinion, are perfectly sweet, buttery, delicious, crisp yet tender, and most importantly, they hold their shape incredibly well as they bake.

Sugar Cookies Recipe

You know those rolls of sugar cookie dough you can buy at the store? I won’t mention any brands, but there are a couple that come to mind. 

The cookies taste decent enough. I know because I spent many years of my youth buying those rolls of cookie dough with my mom and sister, and baking them for the holidays. 

We’d always giggle and make fun of the results because while they’d start out as cut-outs of stockings and Christmas trees, they’d end up just looking like big blobs that we’d smother in frosting and sprinkles to visually improve. 

I’d always think, why don’t our cookies look like the ones in magazines? 

How do you make cut out cookies keep their shape?

I eventually learned that this had much to do with the ratio of ingredients in the cookies. Too much butter and sugar can make your cookies spread, especially if the dough isn’t kept cold before baking. 

Most people choose to bake sugar cookies when they’re looking to create cut out shapes for a special occasion or holiday, so it’s a major bummer when you take the time to painstakingly roll out the dough, cut it into various shapes, and then bake it only to find they look like big blobs when they come out of the oven.

Best Sugar Cookie Dough for Cutouts

So, I set out on a mission to find cut out cookies that hold their shape. I searched high and low for the best cut out sugar cookie recipe, and I gave my final vote to this recipe. Why?

Not only does this cookie dough retain it’s shape when it’s been cut out and baked, but it tastes absolutely delicious! 

These cookies are buttery and sweet without being sickly sweet. They’ve got a lovely vanilla essence and a bit of orange zest for a fresh zing.

You can leave out the orange zest, but I highly recommend you include it. It will give your cookies a special something that everyone loves. I make them for many festive occasions, including the holidays (this is the same recipe as my popular French Christmas cookies minus a few holiday spices).

What thickness is best for cut out cookies?

How thick or thin you like your cookies will purely depend on how crisp you want your cookies. The obvious fact is that if you roll out your cookie dough super thin, then it will be a little more challenging to transfer them to a baking sheet (although a sharp-edged spatula can do wonders and should always be used with cut out cookies), and the cookies will bake pretty quickly to a crisp. 

I prefer my cookies rolled out to a medium thickness so that by the time the center has baked through, the edges are crisp but the interior is still tender and chewy.

Best Sugar Cookie Recipe for Decorating

Half the fun of making sugar cookies is the decorating. You can use a tub of your favorite store-bought frosting, making your own buttercream, ganache, or go with a royal icing like I did here. 

Once the cookies completely cooled, I decorated them with pink royal icing and gold sprinkles. In this instance, I was aiming for an elegant approach to Valentine’s Day with the soft pink rather than the typical, bright red.

I also like the way the pink and gold compliment each other. For favors, I placed the cookies in clear pastry bags the day after I iced them. To say they were a hit would be an understatement!

Tips for Making Cut Out Sugar Cookies

  • Be sure to consistently flour your work surface and rolling pin when rolling out the cookies.
  • It helps to refrigerate the cookie dough for about 15 minutes before rolling it out.
  • Use a sharp-edged spatula to help you transfer your cut-out cookies to your baking sheet.
  • Purchase a silicone mat to not only bake your cookies on but to also use as a great, non-stick surface for rolling out cookie dough. This giant silicone pastry mat is my favorite for rolling out dough. 
  • Pop the baking sheet with the cut out cookies into the freezer for 5 minutes before putting them in the oven. Chilling your cookie dough like this always helps a bit in preventing cookies from spreading. 
  • As soon as the edges of your cookies look like they’re beginning to golden, remove the baking sheet from the oven and let the cookies rest on the sheet outside the oven for another 5 minutes. The cookies will continue to bake this way without the intense heat of the oven. 
  • Be sure to let the sugar cookies cool completely before you attempt to decorate them with any kind of frosting or icing.
  • If using royal icing, try using food-grade paint brushes for easy application and precision. 
  • If you will be bagging the cookies, let them dry with the icing overnight (don’t stack them, place in covered containers). If you rush this, there’s a chance the bags will smudge the icing. 
  • 2/3 cup butter
  • 3/4 cup white sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp grated orange zest
  • 1 egg
  • 4 tsp milk
  • 2 cups all purpose flour
  • 1/4 tsp salt
  • 1 1/2 tsp baking powder
  • 4 egg whites
  • 4-4.5 cups powdered sugar, to taste
  • drop of red food dye for pink color

  1. Cream butter and sugar until light and fluffy. Add the vanilla extract, grated orange zest, and the egg; mix on medium speed. Stop and add milk before mixing again.
  2. Pour in the flour, salt, and baking powder before mixing. Keep mixer going until the dough starts coming away from the sides of the bowl and clumps together.
  3. Split the dough in half and flatten each half into a disc shape. Wrap each disc in plastic wrap and either chill for 15-20 minutes.
  4. Preheat the oven to 375°F. Dust your work surface and a rolling pin with flour. Once the dough has chilled, roll out the first disc of dough into 1/4 inch thickness. Begin cutting out cookies using heart-shaped cookie cutters.
  5. Place the cookies on a parchment paper covered baking sheet (or a baking sheet fitted with a silicone mat). Bake in the oven at 375°F for about 6 minutes, just until the edges are slightly golden. They’ll firm up within a few minutes once they’re out of the oven, resting on the baking sheet. Let the cookies rest on the baking sheet for 5 minutes before moving to a wire cooling rack until they’re completely cool.
  6. Meanwhile, create the icing by whisking the egg whites on high speed until it begins to lose its yellowish color. Add in the powdered sugar and continue to whisk until it’s thick and pure white with soft indentations from the whisk.
  7. Add a drop of red dye into the icing and mix until the entire icing is a solid light pink color. Use a brush (or pastry bag) to apply the icing onto the cookies, leaving the edges bare. Drop some gold sprinkles onto the icing and then let the cookies completely dry.

My easy Chocolate Cupcakes recipe yields cupcakes that are light, fluffy, and so much better than a box mix! Made quickly and easily in just one bowl, they can be baked and frosted in less than an hour. Recipe includes a how-to video! 

You’re going to be so happy you found this recipe. After all, who doesn’t love a perfectly balanced chocolate cupcake (preferably topped with a generous swirl of chocolate buttercream). My recipe is incredibly moist, so soft, and so perfectly fluffy. Taste wise, they’re sweet without being too sweet and have a pronounced chocolate flavor. Plus, they’re incredibly quick and easy to make in just one bowl! To put it simply, these chocolate cupcakes are just wonderful.

I first published this recipe six years ago and it’s been a huge hit with my readers and my own faithful go-to chocolate cupcake recipe (I prefer my slightly heavier chocolate cake recipe for cakes). However, the original recipe made a large, awkward number of cupcakes, so I’ve scaled down the recipe to now make a neat 24 cupcakes.

The original recipe also produced cupcakes with completely flat tops, and I’ve since remedied that so the cupcakes come out with subtle domed tops. They look lovely with a swirl of frosting, and speaking of frosting, these cupcakes go great with any kind!

What You Need

Making chocolate cupcakes from scratch is just as easy as using a box mix, but they taste so much better. Here are a few of the ingredients you’ll be using today:

  • Cocoa powder. I recommend using natural, regular cocoa powder in your chocolate cupcakes. Dutch process will change the flavor and could impact the texture (if the baking soda isn’t fully neutralized), so I’d recommend sticking with the recipe as written.
  • Hot water/coffee. It is very important that you use a hot liquid (the hotter the better, but be careful not to splash yourself with it while mixing) as this reacts with the cocoa powder, causing it to “bloom” and fully develop the rich flavor of the cocoa.
  • Oil. Don’t be tempted to replace the oil with melted butter, please! Using oil makes these chocolate cupcakes super moist without weighing them down. The cocoa powder (when bloomed by the hot liquid) provides plenty of flavor, so butter is unnecessary (never would have thought I would type those words!) and actually yields a less-desirable cupcake.
  • Cornstarch. I’ve updated this recipe to include a tablespoon of cornstarch. One of my favorite secret ingredients (you may recognize it from my worst chocolate chip cookies), this simple addition keeps them tender, soft, and fluffy and it also gives these formerly completely flat cupcakes a slight rounded dome.

SAM’S TIP: If you choose to use coffee, your chocolate cupcakes will not taste mocha-esque; rather the coffee helps to enhance the rich chocolate flavors of the cocoa powder. I recommend you use it!

How to Make Chocolate Cupcakes

  1. Whisk all of the dry ingredients and sugar together.
  2. Add the oil, egg, and vanilla and mix to combine (mixture will seem crumbly, just make sure the dry ingredients have all been moistened).
  3. Slowly drizzle in the milk and continue stirring until the batter looks uniform.
  4. Gradually and carefully add the hot liquid and mix until everything is completely combined.

It’s very important to not fill your cupcake liners higher than ⅔ full. If you do, the batter will spread out over the tops and the resulting cupcakes will have flat tops that are likely to sink in on themselves. Opt for under-filling rather than over-filling, and if you do happen to have leftover batter, make extra cupcakes or discard it.

  1. Evenly divide the batter among a lined cupcake pan and bake for 17-19 minutes.
  2. Let cupcakes cool completely before frosting.

SAM’S TIP: I recommend baking one pan of chocolate cupcakes at a time, just in case your oven bakes unevenly or does something funky while baking, or even just in case you accidentally leave the first batch in too long.

While you can always stick with the easy frosting I’ve linked to in the recipe, my chocolate cupcake recipe tastes lovely with just about any topping. Some of my top recommendations are brown butter frosting, marshmallow frosting, cream cheese frosting, peanut butter frosting, Swiss meringue buttercream, or vanilla frosting.

My cupcake batter is watery; what happened?

This chocolate cupcake batter will be very, very thin–much different from the thick batter of my vanilla cake. It’ll seem almost watery/soupy. This is normal and means you’ve done everything right! 

Can I use this recipe to make chocolate cake?

While I do have a great chocolate cake recipe, you can use this recipe to make a two layer 8″ or 9″ cake. I provide instructions on how to do this in the recipe notes.

Can I leave out the cocoa powder to make vanilla cupcakes?

I don’t recommend it. I suggest you make my easy vanilla cupcake recipe instead!

Prevent your screen from going dark

  • Arrange rack to center of oven and preheat oven to 350F (175C). Line two 12-count muffin tins with paper liners.
  • In a large bowl, whisk together sugar, flour, cocoa powder, cornstarch, baking powder, baking soda, and salt (I make this recipe with an electric mixer but it can be done by hand using a whisk and spatula instead).
  • Add canola oil, egg, egg yolk, and vanilla extract and stir until batter is combined (it will be a bit dry and crumbly but all of the flour mixture should be moistened before proceeding).
  • Drizzle in milk while stirring and stir until batter is uniform and completely combined.
  • Gradually add hot coffee or hot water (take care not to burn yourself!) and stir until liquid is completely incorporated into the batter and you have a smooth chocolate batter. Scrape the sides and bottom of the bowl to ensure everything is well-combined. The batter will be very thin, this is normal!
  • Evenly divide batter into prepared muffin tin, but take care to fill liners between ½ and not more than ⅔ of the way full, this is typically about 3 Tablespoons of batter or less per cupcake liner. Over-filled liners will result in cupcakes with flat tops and they may cave in on themselves. If you have excess batter, discard it (or make extra cupcakes!).
  • Transfer one pan of cupcakes to 350F (175C) preheated oven and bake for 17-19 minutes or until a toothpick inserted in the center comes out with a few moist crumbs (or clean). Allow to cool for 10-15 minutes in baking pan before carefully removing to cooling rack to cool completely before frosting (I like to use a knife to gently pry up the cupcake from the bottom and then carefully lift it out to a cooling rack). Repeat with second pan of cupcakes
  • Once cupcakes have cooled, frost with my chocolate frosting or your favorite frosting recipe.
I recommend using natural unsweetened cocoa powder for best results. However, in a pinch Dutch process cocoa powder can be used instead, but note that the flavor will be slightly different and the cupcakes will be darker. Cornstarch is my secret ingredient, it makes the cupcakes tender and fluffy and gives them the perfect, slight domed tops. However, if you do not have it on hand you may omit it, note that your cupcakes will likely be flatter though. A hot liquid is essential to properly blooming the cocoa powder (which gives the cake a pronounced, rich chocolate flavor). I like to use hot coffee because the coffee flavor enhances the chocolate, making the flavor even richer and deeper. However, you can just use hot water instead. The hotter the liquid the better; boiling is fine, just be careful! Please note I don’t recommend using other hot liquids such as hot chocolate which often have other additives and sugar added and could adversely affect the final outcome. I used my Ateco 848 tip to pipe the frosting on the cupcakes in the photos above and in the video. If you wish to frost all of your cupcakes this generously you will want to double the frosting called for in the recipe that I linked to, but honestly you don’t need to and a more modest amount (half the amount shown) works great and allows the cupcake flavor to really shine, it just didn’t look quite as nice in the pictures! You may bake these cupcakes in two 8” pans for 35-37 minutes or until a toothpick inserted in the center comes out clean with a few moist crumbs. In two 9” pans the cakes will take a bit less time, start checking at 30-32 minutes. This recipe should also work just fine in a 13×9” pan, but I would keep an eye on it as I haven’t tested it in this size pan yet.

These Cut-Out Sugar Cookies are one of our top favorite cookies. I make these the most out of any other cookie recipe on my blog and bake them year-round, for any occasion. I decided to make Valentine’s Day cookies by using a heart-shaped cookie cutter but you can use any shape.

I used to sell these decorated cookies on Etsy and ship them all over the United States a few years ago and I still get requests to make them. So now, you can make your own! I promise, these are the best roll-out sugar cookies and you’ll understand why once you make them. 

I’m sharing my recipe with you because it’s too good and too easy. Plus, everyone needs a simple go-to sugar cookie recipe.

INGREDIENTS

  • Butter: I use salted butter- it adds just the right amount of salt that’s needed.
  • Sugar: the main ingredient.
  • Egg: one large, whole egg at room temperature.
  • Vanilla and almond extract: gives the cookie dough the ultimate “sugar cookie” flavor.
  • Flour: all-purpose is preferred although you could make these with whole wheat flour however, it will change the flavor.
  • Baking powder: makes these cookies rise just a bit.

HOW TO MAKE CUT-OUT SUGAR COOKIES

CREAM BUTTER AND SUGAR. In a large bowl, beat butter and sugar with an electric hand mixer or kitchen stand mixer. Beat until light and fluffy, be sure to scrape down the sides of the bowl. Beat in egg and extracts.
ADD FLOUR. Slowly mix in flour and baking powder, 1 cup at a time until cookie dough has formed.
ROLL OUT DOUGH. Divide the dough into 2 balls. Roll out each dough ball into a 12-inch circle with a rolling pin on a floured surface. Cut out cookies, at least 1/8 inch thick, and place on a cookie sheet lined with parchment paper or a silpat mat.
FREEZE CUT-OUT COOKIES. Place the cookie sheet in the freezer for 15-30 minutes.
BAKE. Preheat oven to 350 degrees F. Bake cookies in the center rack for 8-11 minutes, or just until the edges of the cookies are lightly golden brown. Let cool for 5 minutes before transferring to a cooling rack. Repeat until all of your cookies are baked.

You can make these into large or smaller cookie shapes, just note the baking time will vary a bit. 

I’ve perfected this recipe for years and made this recipe hundreds of times so it’s exactly what I want in a cut-out sugar cookie. Before this recipe, my dough would also spread and it was difficult to decorate. You don’t have to worry about that with these cookies! 

I’ve learned letting the cut-out cookie dough freeze is the trick and it works every single time. The best part is you only need to freeze the cookies for 20-30 minutes for perfeclty shaped cookies.

HOW TO MAKE SUGAR COOKIE ICING

There are many different ways you can ice or frost these sugar cookies. You can either go with a classic icing that’s thinner and lighter. If you wanted a thicker frosting, a classic buttercream will work perfectly. If you are wanting to use a flooding method for extensive decorating, I highly recommend using royal icing that has meringue powder. 

For the classic icing I used, simply whisk together the powdered sugar, milk, and extracts until smooth. If the icing seems to be too thick, add more milk. If it seems to be too thin, add more powdered sugar. 

Add food coloring gel if you want your icing to be colored.

You can add your icing to a ziplock bag, snip off a corner, and squeeze onto the cookie. Alternatively, you can use a spoon or butter knife to spread the icing on the cookie as well.

RECIPE VARIATIONS

Funfetti Sugar Cookies: Add sprinkles to the cookie dough.

Chocolate Sugar Cookies: Add a few tablespoons of cocoa powder to the cookie dough and top the cookies with melted chocolate or a chocolate frosting.

Chocolate chip sugar cookies: add 1/2 cup of mini chocolate chips to the cookies dough. Be careful not to add too any otherwise they will melt.

Lemon Sugar Cookies: add 1 tablespoon of fresh lemon zest to the cookie dough and swap the almond extract for lemon extract. You could also use fresh lemon juice. Check out these drop Lemon Sugar Cookies

Flavored Icing or frosting: you can use any frosting or icing that you prefer. You can use different flavored frosting such as strawberry, chocolate, white chocolate, vanilla, funfetti, coffee,  etc. 

Royal icing: used for flood technique decorating if you are wanted a more decorated look.

Unfrosted sugar cookies: this is my husband’s favorite way to eat these cookies. These cookies are just as delicious without the frosting, and you really get to enjoy the flavor of the sugar cookie without the extra sweetness from the icing or frosting.

HOW TO DECORATE SUGAR COOKIES

You can decorate these cookies any way you prefer. These are the perfect cookies for any holiday or occasion since you could use different cookie cutter shapes, icing, and sprinkles. 

I love using either a simple icing, buttercream frosting, or a use royal icing depending on how decorated I want the cookies.

I always outline my cookies with the icing so it will hold the rest of the icing I fill the cookie with and it helps maintain the shape. Top the cookie with sprinkles immediately and let them dry for at least 20 minutes to harden.

TIPS

  • Dip the cookie cutter in flour before each use. This will prevent the cookie cutter from sticking to the dough.
  • Make sure to roll out the cookie dough 1/8-1/4 inch thick. You don’t want the dough to be thinner than that, otherwise, they can burn and end up crunchy. 
  • If you’re not sure what shape to make these cookies, you can just make them a round cookie and use a biscuit cutter or the back of a cup to cut them out.
  • Add the icing to a piping bag or ziplock bag and snip a corner off so you can easily ice your cookies to create a heart shape.
  • Freezing the cutout cookie dough is essential. You must do this otherwise your cookie may lose its shape and spread.

WHY THIS RECIPE WORKS

  • You can use any type of cookie cutter and icing so these cookies are perfect year-round.
  • They are thick, chewy, and soft– everything you want in a sugar cookie. 
  • Kids can help make these cookies by cutting out the dough, icing them, or adding the sprinkles.
  • This cookie dough won’t spread like most cut-out sugar cookies. 
  • Unfrosted baked cookies freeze very well, for up to 3 months so you can always have cookies ready to be frosted. This is always super handy and a great idea (especially if you have kids).

LEFTOVERS STORAGE

When I used to sell these cookies, we had a super tiny kitchen at the time so the only way that I would be able to make these with ease is to make batches a few days ahead and freeze the baked unfrosted cooked cookies. These cookies freeze very well when they are unfrosted. It also saves you time if you don’t want to go through the whole process of making the cookies.

Store any iced or frosted cookies in an airtight container on the counter of a cool area for up to 1 week

To freeze, make sure the unfrosted cookies are completely cool. Place them in a large ziplock container, you can carefully stack them or place parchment paper in between each layer. Freeze for up to 3 months. When you are ready to frost and decorate the cookies, remove the cookies from the freezer and let them thaw for 30 minutes to 1 hour.

1. Lake Conroe

You can also enjoy an ample number of restaurants, bars, museums, and parks in eccentric downtown Austin.

4. Lake Buchanan

Lake Buchanan, also northwest of Austin TX, offers fishing, boating, camping, hiking, nature watching, and a beautiful waterfall. You can also take a scenic cruise with Vanishing Texas River Cruise to further appreciate the lake’s wildlife and scenery. 5. Lake Ray Hubbard (Rockwall Lake)

7. Canyon Lake

Canyon Lake is located in Comal County, north of San Antonio, boasting a variety of summer activities! At this lake, you can camp and picnic in its numerous parks, plus swim, fish, and boat in the lake. There is also a par 72 golf course if you feel like hitting the green. You can easily plan a weekend of activities in nearby San Antonio, enjoy wine-tasting in New Braunfels, or visit the Heritage Museum of the Texas Hill Country in the city of Canyon Lake.

8. Devil’s Waterhole

Surrounded by unique rock formations, Devil’s Waterhole is located in Inks Lake State Park and is a beautiful place to take a dip. Featuring swimming, fishing, kayaking, hiking, and camping, there’s plenty here for everyone. In neighboring Burnet, you can visit museums and parks. With its own little waterfall, Wolf Creek Lake is a charming place to visit. Located in Palestine, this lake offers fishing, hiking, several picnic areas, and a boat ramp for small boats. You can also enjoy numerous activities in Palestine, such as visiting the local parks and or checking out the Texas State Railroad Palestine Depot.

15. Lake Tyler

Lake Tyler is a great place to relax and play! You can swim, boat, waterski, fish, and hike, in addition to taking in the beautiful views. You can also camp at the Boulders Campground which includes a renovated fishing barge and boardwalk. Tyler also offers plenty to do with its zoo, museums, gardens, and restaurants.

White Rock Lake is just five miles from downtown Dallas, making it easily accessible for some summer fun! With kayaking, boating, hiking, birdwatching, biking, picnic areas, and a dog park, there’s something for everyone. There’s also loads of activities, restaurants, and shops to enjoy nearby in Dallas.

17. Bardwell Lake

Another excellent place to cool off this summer: Bardwell Lake in Ellis County. You can choose from swimming, boating, fishing, picnicking, camping, and watching the surrounding wildlife. If you’re into auto racing, don’t forget to check out nearby Ennis, where you can take in the sensations of a drag race at the Texas Motorplex!

18. Salmon Lake Park

Salmon Lake Park is a two-acre, spring-fed lake that offers swimming, camping, and even an “old west” town! In this setting, you can also hike, take a ride on a miniature train, and enjoy the beautiful scenery. If you need a place to stay, reserve one of the many cabins, RV sites, or campsites. In Grapeland, you can continue the adventure at Grapeland Safari or Mission Tejas State Park.

19. Lake Livingston

Located within Lake Livingston State Park, Lake Livingston gives you the chance to fish, swim, boat, hike, camp, and geocache – a great place for a getaway! Make sure to bring along your hammock because the trees make the perfect place to set up for a nap or some afternoon reading. In Livingston, you can also enjoy the bowling alley, tennis courts, golf course, museums, and parks.

20. Grapevine Lake

Grapevine Lake is an 8,000-acre lake with 60-miles of shoreline, and there’s plenty of activities to go around! At this lake, you can boat, swim, fish, bike, hike, camp, and take your kiddos to the numerous playgrounds. When you need to refuel, grab a burger at Big Daddy’s at the Scott’s Landing Marina on the south side of the lake! Also, Grapevine has a variety of activities to enjoy such as the Legoland Discovery Center, the Grapevine Aquarium, the Grapevine Vintage Railroad, and the urban wine trail.

21. Joe Pool Lake

Joe Pool Lake is the perfect place to spend time in the great outdoors. Surrounded by Grand Prairie, Cedar Hill, and Mansfield, this lake features several beaches for swimming, fishing, boating, waterskiing, and kayaking. You can also camp, hike, bike, and take in the beautiful landscape. There are even three state parks nearby – Cedar Hill State Park, Lloyd Park, and Lynn Creek Park. At Lynn Creek, dine on the water at Blue Sunshine Patio Bar & Grill. Or check out Grand Prairie with its historical downtown and additional dining options.

22. Lake Lewisville

Formerly known as Garza-Little Elm Reservoir, Lake Lewisville offers 233-miles of shoreline for fishing, waterskiing, boating, and swimming. There are also an ample number of beaches, plus camping, biking, and hiking, numerous marinas, and opportunities to rent boats and reserve cabins. In Lewisville, you can also check out the nature preserves, restaurants, and city parks.

23. Cedar Lake

Cedar Lake within Cleburne State Park is unique given that it’s a no-wake lake – providing for peaceful waters and a quiet respite where you can canoe, kayak, swim, and fish. At this lake, you can also hike, camp, bike, geocache, and nature watch. To explore the local area, check out the museums, parks, and restaurants in nearby Cleburne.

24. Lake Brownwood

Lake Brownwood is located in Lake Brownwood State Park and is an ideal setting for a summer trip! You can boat, fish, swim, geocache, and hike, in addition to using the volleyball court and softball field. If you have a large group, you can also reserve the Group Hall – complete with a lakeside dance pavilion – for your next reunion or event. Brownwood also has a historic downtown with museums and dining waiting for you.

25. Lake Georgetown

Lake Georgetown boasts swimming, boating, watersports, fishing, and picnicking. You can also camp and enjoy wildlife as you immerse yourself in the great outdoors. To continue the adventure, check out the activities in Georgetown, such as Inner Space Cavern (a karst cave), Blue Hole Park (a beautiful lagoon), and many museums and restaurants.

26. Lady Bird Lake

Flowing through the center of Austin, it looks like a river, but it is actually Lady Bird Lake! While swimming isn’t allowed, you can kayak, paddleboard, and enjoy other no-wake boating. In fact, you can rent a donut boat (a round boat complete with an umbrella and a table that fits ten people), a swan pedal boat, or even a fun retro-looking boat. There’s also plenty of walking/running paths at Zilker Park to take in the lakeside views. If you are looking for a place to swim, nearby Barton Springs Pool is your answer! Or check out the Congress Avenue Bridge bats for a nighttime extravaganza.

27. Waterloo Lake

Waterloo Lake, excellent for families, features kayaking, paddleboarding, fishing, and even a pool to take a dip in! You can also walk and bike, in addition to visiting the baseball field or playground with your kiddos. To see more of the area, check out Eisenhower State Park or pay a visit to the Homestead Vineyard and Winery in Denison.

28. Lake Jacksonville

Lake Jacksonville is a 500-acre lake surrounded by scenic pine wood views and wildlife with recreational activities like swimming, skiing, and boat ramps if you have a boat in tow. Cast your line and you may get lucky and catch a bass or a bluegill! There are seven campsites fully equipped with water and electricity, as well as ten RV pads. Grab a picnic table for a meal nearby this tranquil East Texas reservoir as a resting place for the afternoon or your regular dinner spot if you’re staying for multiple nights. Drop into Jacksonville and explore their quaint downtown while you’re there too!

There’s nothing better than a day out on the lake or a camping trip with one nearby to cool off in when it gets a little too hot. Banana Cake with Cream Cheese Frosting - I Wash You Dry

10-05-2022 · Powdered Sugar. Place the butter and cream cheese in the bowl of your mixer fitted with the paddle attachment and beat until creamy. Add in the vanilla, salt, cinnamon and powdered sugar and mix on low speed until combined, then increase speed and beat until fluffy. Spread the icing completely over the cooled cake.

Difference Between Banana Bread and Banana Cake?

So what exactly is the difference between banana bread and banana cake

Banana bread is typically more dense and baked in a bread loaf pan with a more coarse crumb texture.

A Banana cake has more of a light and airy cake consistency, while still being really moist from the bananas. The texture of the crumb on a banana cake is also lighter and less dense.

The reason I decided to bake this cake in a large sheet pan is because of the cake to frosting ratio. I wanted the cake to be moist and tender, but not too thick.

Spreading the batter out into a sheet pan made the cake thinner, while still moist and the frosting on top was the perfect amount to give that added touch of sweetness.

How To Make Banana Cake

CREAM THE BUTTER    To make this easy banana cake from scratch, start by creaming the butter in a bowl until it’s nice and fluffy, about 1 minute. Then add in the sugar and brown sugar and continue beating for an additional 2 minutes until it’s nice and combined.

Make sure to scrap down the sides of the bowl as needed.

ADD WET INGREDIENTS   Add the eggs one at a time, while continuing to beat in between. Then add in the mashed banana and vanilla extract.

ALTERNATE DRY INGREDIENTS    Finally, alternate adding the dry ingredients to the wet ingredients with the buttermilk. Keep beating just until combined. Spread batter into a prepared sheet pan and bake until a toothpick inserted in the center comes out clean.

Cinnamon Cream Cheese Frosting

Just a touch of cinnamon in the cream cheese frosting gives the whole cake a deliciously warm taste.

Here’s what you’ll need in order to make this creamy and luscious frosting…

  • Cream Cheesesoftened
  • Buttersoftened
  • Vanilla Extract
  • Salt
  • Cinnamon
  • Powdered Sugar

Place the butter and cream cheese in the bowl of your mixer fitted with the paddle attachment and beat until creamy. Add in the vanilla, salt, cinnamon and powdered sugar and mix on low speed until combined, then increase speed and beat until fluffy.

Spread the icing completely over the cooled cake.

PRO TIP:  Since this cake has cream cheese in the frosting it will need to be stored (covered) in the fridge.

What Size Cake Pan?

Like I mentioned earlier, we’re baking this banana cake in a sheet pan that is approximately 13″ x 18″. This is called a “Half Sheet” in the baking world.

I have this set from Amazon, which includes a sturdy lid, making it easy to bake the cake and then store it in the fridge.

Can I Use a 9×13 Pan?

With this recipe you’ll be better off using a sheet pan. If you don’t have a sheet pan and would prefer to use a standard cake pan, give this Banana Crumb Cake recipe a try!

  • Preheat oven to 350 degrees F. Grease a 13"x18" sheet pan with non-stick spray and set aside.
  • Mash the bananas in a bowl with a fork until smooth, then set aside.
  • In a separate bowl whisk together the flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • To the bowl of a stand mixer, beat the butter with a paddle attachment for about 1 minute, until it's nice and creamy. Add in the sugar and brown sugar and beat an additional 2 minutes until creamy. Add in the eggs one at a time, while still beating on low speed. Blend in the vanilla extract. Scrape down the sides of the bowl as needed.
  • Add the mashed bananas to the wet ingredients and mix well. Finally, alternate adding in ⅓ of the flour mixture, then ⅓ of the buttermilk to the wet ingredients, beating well in between. Mixture will be slightly lumpy and that's ok.
  • Spread the batter evenly into the prepared pan and bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Remove from oven and set on a wire rack to cool completely.
  • Beat together the cream cheese and butter until light and creamy. Add in the vanilla extract, cinnamon and salt and mix.
  • Add the powdered sugar to the bowl and mix slowly until it's incorporated, then increase speed and beat for an additional 2 minutes until it's light and fluffy.
  • Spread frosting evenly over the cooled cake. Cover and store cake in the fridge until ready to serve. Enjoy!
