We haven’t had a coffee table for years! I love them, love styling them, love the function they add, but having one doesn’t always work out. Our daughters are eight and a half years apart, so we’ve had littles rolling around the ground and jumping off sofas for a while – it just didn’t make sense for the way we used our family room. Then there was the challenge of finding one I loved and was willing to pay for. For years I’ve been searching for vintage pieces to create my own coffee table, checking Facebook Marketplace for a unique piece to restore, but no luck. When I finally found one that I really liked and felt would coordinate with my coordinated living room pieces, it was way out of my budget. So, I decided to build a Pottery Barn coffee table copycat, but not from scratch. Instead, I built a simple cover that slides onto an existing tabletop that I didn’t love so much!

Building the Pottery Barn coffee table copycat was so much fun! I wasn’t too concerned if it didn’t work out because I used the most inexpensive spacer wood I could (aka lattice boards). I knew going in that the boards weren’t exactly the same size, they were rough, and uneven, but I liked those qualities about them because that meant I could easily create a unique piece that looked a little old and rustic with a modern frame. I added the decorative corners at the last minute because I think they add a little more stability to the thin wooden corners, and they add a nice finishing touch too. The best part about this Pottery Barn coffee table copycat is that it lends itself to any design you can think of, and it’s simple enough for anyone to take on.

This DIY project started with this inexpensive coffee table from Walmart. I was really only after the black metal frame and the size. It was actually less expensive for me to buy an entire coffee table over just a black frame to add my own top to. Go figure! It turned out to be better this way though, if my coffee table cover didn’t turn out, I still had a useable table, and the existing top added strength to my cover. Below I’ve included some additional coffee tables that I considered.

You may look at the affordable Walmart coffee table and think the chevron pattern looks pretty nice and the color is OK, but I was after a thicker looking top without adding a lot of weight. I also wanted to apply my custom stain color to the wood and bring in the herringbone pattern. This Pottery Barn coffee table copycat isn’t an exact match, but it’s definitely inspired and more affordable than the original. The cool part is that both of my daughters have expressed how much they like the new table – which is pretty great to me. Here’s a photo of the original coffee table in our living room before I created a simple cover for it.

I love the mix of modern black metal with the rustic worn top – it feels cozy, a little vintage, but sturdy and fresh in a way. The Malcolm coffee table is longer than mine, uses solid wood, has the designer look and details I love, but when something is outside my budget I always consider if I can make it myself. And this time I decided I would attempt something similar for a fraction of the price. Below you can see the Pottery Barn coffee table that inspired this project.

Pottery Barn Coffee Table Copycat – Tutorial

The cover that I built started with a piece of scrap plywood I had on hand. I used 1/2-inch plywood so that it was thick enough to nail into, but not too heavy. To get the plywood to fit the top of the coffee table, I just flipped the coffee table upside down and traced around it onto the plywood. Just cut your traced lines. Then I cut a bunch of 12-inch-long lattice pieces. I used about 14 spacer (lattice) boards for the top, and then I was able to use the trimmed off pieces to fill in the rest of the spaces. The video I made showing the process is the best way to demonstrate how the top pattern came together. I was able to use 2″ wide boards to create the border – and these boards were the same thickness as the lattice boards along the top so it doesn’t bulge over the edges at all. You can use any boards you want to wrap and frame the new cover, but I wanted to make sure the cover didn’t overlap with too much thickness away from the frame. My goal wasn’t to create something that looked made, but to create something that looked like it always was. I also found these decorative corner pieces to add a nice detail and some added security for the corners of the coffee table cover.

Once the boards were glued and nailed down (3/8″ brad nails), there were some small spaces in between some boards. The lattice boards aren’t perfectly uniform, so I used wood filler to fill some of the wider spaces. The wood filler claims it can be stained, but there are some places that didn’t stain well. Again, I wasn’t looking for perfection and this outcome didn’t ruin the overall look but be aware of my experience before you begin a similar project. I sanded the entire cover with 180 grit and then 220 grit sandpaper. Once cleaned off, I added Rove Dwell’s Farmhouse stain. Four hours later, gently sand with a 220-grit sanding sponge, and clean off. Then, I lightly applied Varathane’s whitewash stain and immediately wiped it off. These are the two main steps to achieve my white oak looking stain color. I love the warm and worn look of it, and it’s not too dark for my taste. A matte polyurethane finish was brushed on to protect the surface.

Now that I have a coffee table in front of my sofa, I’ve been enjoying the opportunity to style it. Little changes to tabletops are a great way to reuse your decor and refresh a room. Recipe Ingredients

First time baking? No worries because this key lime pie recipe is so easy to follow and doesn’t require any complicated techniques. As long as you have your mixing bowl and spoon, you’re good! 😉

  • Graham Cracker Crust – You only need crushed graham crackers, melted butter, sugar, and vanilla extract to make the graham crust. The sugar holds it together when it bakes. You can replace the graham crackers with any cracker-like cookie (ginger snaps are my fave). And if you need a gluten-free pie, there is an excellent selection of gluten-free crackers that make a fantastic crust.
  • Key Lime – It has a more robust and bolder flavor and a unique and more distinct aroma than regular lime. Don’t forget to add the key lime zest because it gives our pie its iconic key lime flavor.
  • Egg Yolks – Aside from being a binder, egg yolks also add richness and a velvety texture to our pie filling.
  • Heavy Cream and Sour Cream – I love the added kick of tanginess from sour cream. It provides another layer of flavor to the filling apart from just being plain creamy. You may use plain yogurt or Greek yogurt as a substitute.
  • Condensed Milk – It thickens our luscious pie filling while adding creaminess and sweetness, too. Homemade condensed milk from scratch is super easy and more economical.
  • Topping – Let’s keep it simple with a lovely whipped cream, powdered sugar, and vanilla extract. Aside from making our pie more enticing, it also balances its tartness.

How to Make Key Lime Pie

Make the Crust

  • Grease the Pan – Grease a 9″x1.5-inch pie pan with baking spray or butter. Set aside.
  • Crush the Crackers – In a food processor, add graham crackers and pulse several times until crumbs are fine. Or crush them manually, as shown in the photos. (Photos 1-2)
  • Add Sugar, Cinnamon, and Melted Butter – Continue grinding until everything is thoroughly mixed. If using ground graham crackers, place all the ingredients in a large bowl and mix thoroughly – proceed with the following steps. (Photos 3-4)
  • Prepare the Crust – Press the graham cracker mixture into the prepared pie pan with the bottom of a measuring cup. Keep pressing until the crumbs are firmly positioned on the bottom and up the sides of the pan.
  • Bake It – Bake until set, about 8-10 minutes, or until slightly brown. Then remove it from the oven and place it on a rack to cool.

Make the Pie Filling

  • Slice and Squeeze – Carefully grate the skin to get the key lime zest. Then cut the key limes in half and squeeze out the juice. (Photos 7-9)
  • Combine sweetened condensed milk, sour cream, egg yolks, key lime juice, and zest in a large bowl. Whip or beat the mixture to increase the volume and thicken it slightly. (Photos 10-12)

Bake and Chill

  • Pour the thickened mixture into the warm graham cracker crust. (Photo 13)
  • Bake, Cool, and Chill – Bake for 15-18 minutes until the filling is almost set; it should wobble slightly. Let it cool at room temperature for 30-45 minutes, then place it in the refrigerator to chill thoroughly, about 3 hours. (Photo 14)
Decorating with whipped cream

Make the Topping and Decorate

  • Whip – Pour the whipped cream into a large bowl and mix with an electric mixer until soft peaks form. Then add powdered sugar and vanilla extract, and continue mixing until medium peaks form. (Photos 15-17)
  • Decorate – Pipe whipped cream mixture decoratively on top of the pie. Alternatively, you can place the mixture on the pie without piping. Decorate the pie with the lime zest and lime slices. (Photos 18-20)
  • Refrigerate – Store the pie in the refrigerator until ready to serve.
  • Serve – When ready to slice, place the knife in hot water and slice into wedges, wiping your knife clean in between slices. (Wiping the knife produces a clean cut.) Serve cold.

Recipe Variations

  • Meringue Topping – What to do with the egg whites? Make meringue! The airy texture is similar to marshmallow fluff, only lighter. I like toasting the top for the caramel flavor. Yum!
  • Dairy-Free – Replace both cream and sour cream with equal amounts of coconut cream and a teaspoon of fresh lime juice. Then replace the evaporated milk with a dairy-free substitute for a dairy-free filling. Tofu with a teaspoon of lime juice also works if you don’t like coconut.
  • Eggless – Go eggless with a no-bake key lime pie, just like my No Bake Key Lime Mango Coconut Cheese Cake Pie. Simply use the same graham cracker crust and the no-bake filling. As easy as 1, 2, 3! Oh yes! 😉
  • Fruity Surprise – Shake things up a bit by adding a fruity surprise to the pie filling. You can add a half cup of pureed or sliced strawberries, blueberries, pineapple, or mango to our luscious filling.
  • Chocolately Twist – Instead of the usual graham cracker crust, you can replace it with crushed Oreos for amazing chocolate goodness.

Tips and Tricks

  • You can replace key lime with regular lime if you can’t find them. However, the taste will be slightly different, which is not a bad thing.😉
  • Do not overmix the pie filling mixture to prevent incorporating too much air. Overmixing causes the filling to inflate while baking and then deflate after baking, cracking the pie’s surface.
  • The filling should be a little jiggly in the middle. But don’t worry because it will set as it cools down and after chilling.
  • Zesting the lime before juicing makes the job easier.

I highly recommend making this easy key lime pie recipe a day ahead to give it enough time to set before serving. The flavors meld beautifully, and the texture is so irresistibly good, giving this summertime dessert its soft melt-in-your-mouth goodness.

However, I suggest adding the whipped cream topping and decorations on the day of serving. That way, it’s easier to wrap the pie with a cling wrap and store it in the fridge to keep it fresh before serving.

Serving and Storage Instructions

This pie is best served cold. That is why it’s also the perfect treat this summer to help you cool down on a hot summer day. Along with refreshing, wholesome beverages such as mango or pineapple juice. Or fruity summer cocktails, like a hurricane and mimosa, to kick off the party.

As for the leftovers, you can cover the dish with a cling wrap or foil or transfer them into an airtight container before storing them. They will keep in the fridge for three days and for two months in the freezer.

Tip: Make sure to remove as much air as possible if you intend to store the pie in the freezer to prevent ice build-up and minimize curdling after thawing.

Key lime has higher acidity than regular limes, so it may taste a tad bitter. If you ended up with bitter key limes, try replacing a tablespoon of the key lime juice with a tablespoon of lemon juice to balance it out.

Why is my key lime pie runny?

There could be two reasons. First, it has to bake long enough for the egg to set. It should be wobbly like jello when you take it out of the oven but not sloshy. Second, it may need to chill a little longer. It should firm up in about three hours of fridge time. If that doesn’t work, the egg yolks may be too small. Try adding an extra one the next time.

How do you know when the key lime is set?

  • Preheat the oven to 375℉/190℃ and set an oven rack in the middle position.
  • Grease a 9×1.5-inch pie pan with baking spray or butter. Set aside.
  • In a food processor, add graham crackers, and pulse several times until crumbs are fine. Or crush them manually, as shown in the photos.
  • Add sugar, cinnamon, and melted butter, and continue grinding until thoroughly mixed. (If using ground graham crackers, place all the ingredients in a large bowl and mix until thoroughly combined – proceed with the following steps.)
  • Press the graham cracker mixture into the prepared pie pan with the bottom of a measuring cup. Keep pressing until the crumbs are firmly positioned on the bottom and up the sides of the pan.
  • Bake until set, about 8-10 minutes, or until slightly brown. Remove and place on a rack to cool.
  • Carefully grate the skin to get the key lime zest. Then cut the key limes in half and squeeze out the juice.
  • Combine sweetened condensed milk, sour cream, egg yolks, key lime juice, and zest in a large bowl. Whip or beat the mixture to increase the volume and thicken it slightly.
  • Pour the thickened mixture into the warm graham cracker crust.
  • Bake for 15-18 minutes until the filling is almost set; it should wobble slightly. Let it cool at room temperature for 30-45 minutes, then place it in the refrigerator to chill thoroughly, about 3 hours.
  • Pour the whipped cream into a large bowl and mix with an electric mixer until soft peaks form. Then add the powdered sugar and vanilla extract, and continue mixing until medium peaks form.
  • Pipe whipped cream mixture decoratively on top of the pie. Alternatively, you can place the mixture on the pie without piping. Decorate the pie with the lime zest and lime slices.
  • Store the pie in the refrigerator until ready to serve.
  • When ready to slice, place the knife in hot water and slice into wedges, wiping your knife clean in between slices. Wiping the knife produces a clean cut. Serve cold.
  • You can replace key lime with regular lime if you don’t have them in your area. However, you’ll need to adjust the amount of juice since they have different acidity, and note that the taste will be slightly different.
  • Do not overmix the pie filling mixture to prevent incorporating too much air. Overmixing causes the filling to inflate during baking and deflate after baking, causing a crack on the pie surface.
  • The filling should be a little jiggly in the middle. But don’t worry because it will set as it cools down and after chilling.

This is going to become your instant favorite recipe for lime cake! Fresh tangy limes are the star of this delicious cake! The moist layers are hinted with lime zest, filled with lime curd and frosted with honey lime cream cheese.

  • All-purpose flour-When you measure the flour, spoon your flour into your measuring cup then level it off with the back of a knife.
  • Unsalted butter-Take the butter out 2 hours before making the cake.
  • Oil– Use canola or vegetable.
  • Vanilla extract
  • Limes- Use key limes or regular limes. We are using both the zest and juice in this recipe. The oils in the zest add lots of tart citrus flavor.
  • Milk- Use whole, room temperature milk.
  • Sour cream- Use full fat, room temperature sour cream.

Instructions

Here are the instructions on how to make a lime cake. Please see recipe card below for full instructions including measurements.

Step One-Beat the butter and sugar. Beat room temperature butter and granulated sugar in a large mixing bowl.

Step Two- Mix in the oil. Add the oil. Beat for an additional minute.

Step Three- Add the eggs. With the mixer on medium, add the eggs one at a time. Beat til eggs are incorporated fully.

Step Four-Add the vanilla extract and sour cream. Beat until just combined.

Step Five- Combine dry ingredients. Whisk to combine the flour, baking powder and salt in a medium sized bowl.

Step Six- Add the dry ingredients and milk. Mix in half the dry ingredients. Beat on low speed. Add the milk followed by the rest of the dry ingredients.

Step Seven- Bake the cake. Pour the batter into three 8-inch cake pans. Bake for 18-20 minutes. Allow cakes to cool completely.

Step Eight- Make the lime curd. Whisk the sugar and egg yolks in a saucepan. Stir in the lime zest, lime juice and salt.

Place pan on low heat and stirring constantly until  mixture thickens. Remove pot from heat, then add the butter. Stir until the butter has melted.

Step Nine-Make the cream cheese frosting. Beat the butter and the cream cheese with a mixer until combined. With the mixer to low and add the powdered sugar, lime zest, vanilla extract and salt. Beat 2-3 minutes or until light and fluffy.

ASSEMBLING THE CAKE

  • First, use a serrated knife trim the domes of the cake layers. Cover the layers with plastic wrap and freeze them for 30 minutes before decorating.
  • Place the first layer on your cake stand or turntable, spread ¾ cup of frosting. Pipe a border of frosting around the edge of the cake. This will keep the curd filling secure. Pipe another circle of frosting in the middle of the cake. Fill the middle of the two circles of frosting with lime curd.

  • Next, spread about 3/4 cup of frosting on top of the lime curd layer.
  • Repeat with the second layer.
  • Place the third layer upside down so that the bottom of the layer is on top of the cake. This gives will make sure the top is even and flat.

  • Spread a light layer of frosting over the top and sides of the cake. Freeze the cake for 15 minutes. Freezing the cake will ensure crumbs don’t get into your second coat of frosting.
  • Frost the rest of the cake. If making a naked cake, use a cake scraper to scrape off any excess frosting.

DECORATING THE CAKE

Pour some of the lime curd into a squeeze bottle or use a teaspoon to drizzle lime curd along the edge of the cake. Add a little extra lime juice to the curd if you need to thin it out.

Decorate the top of the cake with more frosting and lime slices. I used a Wilton 1M piping tip to pipe the frosting on top.

  • Limes – instead of limes, you can use lemons
  • Lime curd – leave out the lime curd and simply decorate the cake with the cream cheese frosting

VARIATIONS

This cake can be made using regular limes or key limes. To make a key lime cake from scratch, use key limes in place of regular limes.

Instead of drizzling lime curd along the cake’s edge, pour and spread it in an even layer on the top of the the frosted cake. Pipe frosting on top, if you like.

Store leftover cake in an airtight container in the refrigerator for up to 5 days.

The frosted cake can be frozen up to 1 month. Thaw overnight in the refrigerator and bring to room temperature before serving.

EXPERT TIPS

Avoid the white part of the rind when zesting the limes. You want only the outer green zest. The white rind can be bitter.

If you’re going to pipe frosting on top of the cake, chill frosting in the fridge. 20 minutes should be enough to help ensure the frosting will hold its shape once piped.

The pie crust can really make or break an entire pie.  Even when filled with a delicious filling, the overall pie won’t live up to its potential unless the pie crust is equally tasty and flaky.  We all know this is true and have been really excited to eat a piece of pie, whether one we made ourselves or one that we purchased from a restaurant, only to be let down by a crust that was underdone, too plain, or just off in taste.

Protect yourself against this tragedy the next time you make a pie with one of the best pie crust recipes.  And, if the flaky deliciousness of this crust isn’t enough on its own, you’ll be amazed at just how easy the recipe is to make.  You only need three ingredients!  Read on to learn how to make this tasty 3 ingredient pie crust that I’m confident will become your new go-to recipe.  

There is quite the debate about whether butter or shortening is the best choice when making a pie crust.  The right choice really comes down to the taste that you prefer, but there are also some pros and cons of using either butter or shortening when making a pie crust.

Butter

If you’re looking for the tastiest flavor for your pie crust, you can’t go wrong with butter.  Using butter also helps to create a layered and flaky pie crust.  The reason that butter creates a flakier pie crust than shortening is because butter is only about 85% fat, while shortening is 100% fat.  The other 15% or so of butter is water.  When you bake the crust in the oven, the water becomes steam as it evaporates.  This causes the layers of the crust to separate slightly, making them flakier and puffier than when you use shortening.

However, there are some downsides to using butter to consider too.  Butter melts at a lower temperature than shortening, which can make it more tricky to work with when making a pie.  You want the butter (or shortening) to remain cold to work it in with the flour for the crust, and if it softens too much it can tear too easily.  When butter is fresh out of the fridge, it can also be too cold.  So finding that sweet spot of just the right firmness can be a challenge.

Shortening

This leads us right into the benefits of choosing shortening.  Because of its higher melting point, shortening is easier to work with when making a pie crust.  You don’t have to worry too much about “Goldilocks” and making sure that it is just the right consistency.  

Shortening is also shelf-stable and doesn’t require refrigeration, which can make it easier to store than butter.  Another positive of choosing shortening is that the pie dough should maintain its shape during and after baking better.  For this reason, shortening is often the fat of choice for those making a decorative pie crust.

Shortening, however, is not without flaws either.  The biggest flaw of using shortening instead of butter is the flavor.  Shortening is not as flavorful as butter and is less likely to yield a truly delicious pie.  It can also sometimes make the pie crust taste a bit greasy.

So, is butter or shortening best?

While you can use either butter or shortening to make a pie crust, I think butter is the superior choice in nearly all cases.  You can’t beat the buttery and flaky flavor of a pie crust made with butter.  I always seem to be disappointed in the taste when I decide to give shortening a try.

For this reason, my 3 ingredient pie crust recipe below uses butter, not shortening.  I think you’ll really enjoy this recipe.  

Making a 3 ingredient pie crust is relatively simple.  You’ll just need three ingredients (well, three real ingredients plus ice water) and a few baking tools.

Ingredients

The ingredients you need are:

  • Butter
  • Flour
  • Salt
  • Ice-cold water. 

We already went over why butter is the optimal choice when making a pie crust, but you may be wondering why you need to use ice-cold water.  Using ice water helps to prevent the butter from softening too quickly.  It will help make the butter easier to work with while also yielding a flakier crust.

Tools and Equipment

In addition to the ingredients listed above, there are a few key tools that you’ll need to make my pie crust recipe.

  • Mixing Box
  • Teaspoon measuring spoon
  • Tablespoon measuring spoon
  • Measuring cup
  • Whisk
  • Knife
  • Silicone baking mat or wax paper
  • Pastry blender
  • Rolling pin
  • 9-inch pie pan

Ok, let’s dive right into how to make this pie crust that is certain to be a crowd-pleaser.  I’m going to walk you through each step to help you make sure that your recipe turns out perfectly.

Step 1

Add the salt and flour with a mixing bowl.  Whisk them together.

Step 2

Use a knife to cut the butter into small pieces (aim to get at least 10 slices from the stick of butter).  Add the butter slices to the flour and salt mixture, and use a pastry blender to combine the two.  If you don’t have a pastry blender, you could also use two forks for this step, though a pastry blender will be much easier to use.

Step 3

Continue cutting the butter into the flour mixture until it becomes crumbly and spread throughout.  However, you don’t want to blend it so much that it is completely smooth.

Step 4

Measure out about ½ cup of cold water.  Add a few ice cubes to the measuring cup to keep the water cool.  Use a tablespoon to measure out 1 tablespoon of water (none of the ice) at a time.  Add the tablespoon of water to the flour and butter mixture, and blend it some more with the pastry cutter after each addition. 

Step 5

Continue adding 1 tablespoon of water and blending after each addition until the mixture forms a dry dough.

Spread a little flour out on your counter or baking mat.  Use your hands to form a ball with the dough and place it on the floured countertop.  Wrap the dough ball up with plastic wrap.

Step 7

Let the dough cool in the refrigerator for a minimum of 2 hours.

Step 8

Once you’re ready to remove the dough from the fridge, prepare your countertop.  Layout a silicone baking mat or wax paper on your countertop.  If you’re using wax paper, use a little tape to secure the corners and prevent it from sliding around.  

Take the dough out of the fridge and put it on the baking mat or waxed paper.

Step 9

Use your rolling pan to roll the dough out into a 10-inch circle.  Place the dough into your 9-inch pie pan.

Step 10

Even out the edges of the crust by trimming off any excess dough.  Then, use your fingers to crimp the edges.  Prick the crust using a fork.

Step 11

If you need a pre-cooked pie crust for your recipe, place the crust in a preheated oven set to 425 °F.  Set a timer for 10 minutes.  After 10 minutes, check on the pie.  You want the crust to be golden brown before removing it from the oven.  If it isn’t golden brown, allow it to cook for a few more minutes (it could take up to 15 minutes total).

Otherwise, add your filling to the crust and bake it according to the recipe directions.

  • Don’t expect perfection if this is your first attempt making your own pie crust.  It takes some time to master the art of using a pastry cutter and rolling out dough.
  • A pastry cutter is worth the small investment.  The thick handle and slightly curved design makes it much easier and quicker to use to cut butter into flour than trying to use two forks.  
  • Make sure that your butter is cold when you are ready to cut it into the flour.  If the flour is too warm, it won’t mix properly.
  • Cut the butter into thin slices.  If your butter is too thick, it won’t mix in well with the flour mixture.
  • Don’t add too much water.  Pie crust dough is a drier dough; it should not be overly moist or sticky.  You’ll know that you’ve added enough water once the mixture forms a dough.  Don’t add any more after this point.
  • You can easily double the recipe below to make two pie crusts (to make two pies or a pie with a top crust).  Mix all the ingredients together, then when you’re ready to roll out the dough, split it in half.
  • Always refrigerate the dough for at least two hours.  This step is very important, otherwise your crust won’t turn out right.

You can make the dough ahead of time and store it in the fridge for 1 or 2 days.  If you plan to do this, after you roll the dough out and put it on the pie pan, keep everything in a large zippered plastic bag to prevent it from drying out.

Pie crust dough can also be frozen.  If you plan to freeze your pie crust dough, it is probably best stored in disposable aluminum pie tins.  After rolling out the dough and putting it in a pie tin, place the tin in a freezer-safe bag.  Pie crust can keep in the freezer for up to 2 months.

Prep Time:  20 minutes (plus 2 hour cooling time in refrigerator)

Cook Time:  10 to 15 minutes

Ingredients

  • 1 stick salted butter (½ cup)
  • ¼ teaspoon salt
  • 1 ½ cups all-purpose flour
  • ⅓ to ½ cup ice-cold water

Directions

  1. Whisk the salt and flour together in a mixing bowl.
  2. Cut the butter into thin slices and cut them into the flour mixture using a pastry blender until the mixture begins to look crumbly and the butter is spread throughout.
  3. Add ice cubes to ½ cup of water.  Add 1 tablespoon of water at a time to the butter and flour mixture, cutting it in with the pastry blender after each addition.  Continue adding water until the mixture turns into a dry dough.  You likely will not need the entire ½ cup of water, as pie dough should be dry, not overly moist.
  4. Form the dough into a ball and place it on a floured countertop.  Wrap the dough with plastic wrap and refrigerate it for at least 2 hours.
  5. After 2 hours, preheat the oven to 425 °F.   Then, prepare your baking surface by laying out a baking mat or wax paper on the countertop.
  6. Place the dough on the baking mat or wax paper and roll it into a 10-inch circle with your rolling pin.
  7. Carefully center the dough in a 9-inch pie pan and trim off excess dough along the edges of the crust.  Crimp the edges of the crust with your finger.  Use a fork to prick the crust.
  8. Bake the crust until golden brown, about 10 to 15 minutes, or fill with your favorite filling and bake according to the recipe instructions.

Country style ribs need to have two things to be really good: they need to have a lightly crispy, almost caramelized crust on the exterior and an interior that falls apart the moment you bite into it.

While the former can be achieved with some good lacquering, getting your ribs to the perfect texture and doneness without overcooking them is a real challenge.

This guide should ensure you end up with some amazing, Southern restaurant quality ribs; your guests will probably think you ordered them in rather than made them yourself!

How To Make Country Style Ribs

• Dry the ribs off with a paper towel, patting them completely dry

• In a shallow baking pan, place all of the ribs in a single layer with the fattiest sides facing upwards

• Rub the sweet and smoky dry rub on all sides of the ribs

• Cover the pan tightly with foil and bake for 2 hours at 300 Fahrenheit

• Remove the baking tray carefully from the oven, being careful not to spill the liquid at the bottom

• Check the ribs by poking them with a fork; if they are still tough, cover them again and bake for another 20 minutes

• Remove the ribs to a plate and then drain the liquid

• Place the ribs back onto the tray and brush with all of the BBQ sauce

• Turn the oven down to 275 Fahrenheit and bake for another 60 minutes uncovered, until the ribs are totally tender and pull apart

• Remove the ribs from the oven and baste the ribs again with the BBQ sauce

• Broil for about 5 minutes to crisp it up, rest them for 5 minutes, and then serve

Why Do You Need To Reapply The BBQ Sauce After The First Time?

The secret to that first great quality of really good country-style ribs is that thin, almost crispy crust around the exterior of every single rib.

If you don’t do those few extra additional steps listed in the recipe and just simply slather on your glaze, you won’t get that perfect textural contrast in the form of a thin, sweet, almost crunchy exterior that plays off the soft tenderness of the rib meat itself.

The trick is to be constantly lacquering your glaze over the ribs as it cooks.

While the initial basting of your BBQ sauce glaze is to get the flavor onto the ribs itself, each subsequent coating of BBQ sauce does something a bit different.

As you baste cold BBQ sauce onto the hot ribs and put them back into the oven, the liquid starts to evaporate, and the sugars begin to caramelize. Each new layer of glaze sort of re-injects moisture and flavor into the caramelizing sugar, sort of like adding a bit of water to some caramelized onions that are getting a bit too overcooked too quickly.

This lets the sugars get really, really caramelized and all of the flavors of the sauce to properly intensify, giving it tons of extra flavor on top of the rich, spicy meatiness of the ribs.

How To Avoid Over Cooking Your Ribs & Getting The Perfect Texture

The other key secret of making really great ribs is making sure the meat is really, really tender. This doesn't just mean cooking it for several hours and forgetting about it; it means being really careful and thoughtful while cooking the ribs to ensure that they end up perfect.

Following the temperature guidelines in this recipe should produce some tender, fall-apart ribs, but the final product is always going to depend on the size, thickness, and fattiness of your particular rack of ribs.

The only way to end up with a truly great rack of ribs is to be constantly checking it. The ribs should be done when the meat basically wants to fall off the bone all on its own, and the fork is just the gentle prod that the ribs need to properly all apart.

There is an upper limit, however. If you take it too long, the ribs will be in danger of drying out. So, when you think the ribs are getting close, check them every 10 minutes and pull them as soon as they start to fall apart.

If you leave them much longer, they will start to dry out and lose way too much deliciousness.
